One last thankful to share on the last day of November. 
I'm going to talk about Grant for a second.It's Friday afternoon, he's at work, I'm here at home missing him, looking forward to a weekend together, it's not hard to do. Grant helps me.
He'll trim the baby's nails. or bangs. He'll trim my bangs. 
He takes out the garbage and always comes with me to get groceries.
Makes any annoying phone calls that need to be made.
Makes stir fry. or scrambled eggs.
Makes Sunday mornings before church not stressful. 
Takes Hadley to run errands so I can get a few things done around the house.
He has been helping me with the shop, 
keeping track of inventory and running to the post office.
He cracks my back. 
He will look at any project I'm working on and give me his opinion.
I can talk to him about girl issues.
I just love his unflinching attitude about everything.

Good morning, friends! I can't believe I haven't talked to you about this super, super simple breakfast idea yet. Get ready. It's so easy. I can see it possibly being the best holiday breakfast to adopt for the month of December. So warm and cozy! Add extra cinnamon, and perhaps a splash of egg nog? Mmm. It could even be a side dish when you make the traditional egg casserole or spinach quiche for Christmas morning! Perfect!! I love dreaming up fancy menus. But anyway. Maybe it will come in handy for you. or your kids. Especially if you like a hot cereal kind of breakfast or need a gluten free option.
I'll make this fast: this dish is scrumptious. Steamy rice loaded with cinnamon, vanilla, wholesome honey, and a dab of healthy fat. It's like the ultimate combination for an energy boost, and really quick if you have some leftover rice already in your fridge (which I basically keep at all times). A little pot of this rice has been so great for me when I'm feeling like I need some carbs to start the day...
or a snack that's more like dessert.

By the way, do you wake up ready to eat protein breakfasty stuff or carb stuff? or both? I just asked a friend this the other day. I'm fascinated. So tell me! I love hearing other peoples' priorities and routines! 

Sweet Cinnamon Rice
not really a recipe. feel free to make it up as you go. here's the idea..

1 spoonful of coconut oil (or butter)
1 generous serving of cooked rice, brown or white
4 dashes of cinnamon
2 dashes of vanilla extract
1 pinch of sea salt
1 spoonful of raw honey
optional: a splash of egg nog or full-fat coconut milk

Melt coconut oil over medium heat and add in rice, cinnamon, vanilla, salt, and honey. Heat, stirring occasionally, until warm through. Taste and adjust ingredients as needed. If it's lacking a little flavor, add more coconut oil and a smidgen of vanilla. It should be tasty enough that I could catch you closing your eyes and saying "mmmmm" at the first bite. Literally.

Now I love Larabar even more. They very sweetly sent me a super cute apron and a sack full of my favorite Larabars! All because they saw my post where I made my homemade version of the peanut butter & jelly bars. Wow. Sure, I'll take some free stuff! Do you #diylarabar? They might send you some, too! These were well-liked with my fam when I brought them to our annual Deer Hunting weekend. I'm definitely making them again. It's so nice to open the fridge and cut one of these for a quick snack. I usually need a bite while I'm preparing dinner because I am just so hungry. Pre-dinner fugde is fitting during the Christmas season, anyway. Happy snacking! 
Homemade Walnut Fudge Larabars

1 cup walnuts
1 and 1/3 cups dates*
1 tsp vanilla extract
pinch of sea salt
3-4 T. cocoa powder

Pulse walnuts a couple times in a food processor, then add remaining ingredients to the processor bowl and pulse until it forms a ball of "dough." Roll into truffle size balls and chill. Or press into a small pan, chill, and cut into bars.

*Medjool dates are awesome but can get spendy. I've been using SunMaid dates which you can find by the prunes and raisins in the grocery store. I usually put them in a small pot with a tiny bit of water and warm them up until water is steamy and they're nice and soft before adding them to the food processor.

I'm planning a peppermint version of these with my Christmas baking! Stay tuned!!

Hope you all had a happy Thanksgiving! I just got back from being "home" in Nebraska for the holiday. 







1. Eaten. Thanks given. Everyone deserted Mom's table to take a family pic in the living room.
2. My twin sister is a mom. #thanksgiving
3. Served with whipped cream, glasses of milk, and mugs of coffee.
4. Black Friday happened.
5. There's a piano at Grandma's house. It's irresistible.
6. The boys just plugged it in. Mixing white and colored lights is our new fave. Egg nog up next.
7. Headed home. Next to me: coffee, mom's banana bread, and Breaking Dawn. It was a fun drive.

Man, I love seeing food and drink sitting out on a counter like this. 
You just know that people are gathered together. My family is!
What does your family do on black Friday?
We've been out on the town, hiding gifts under our coats, and listening to Christmas music in the car. It's tradition. We don't mind the madness! (It's actually never that bad.) We love it. 

After the shopping, the lunching, the napping, our Black Friday tradition is to trim the tree! After stringing the lights and sifting through the ornaments, we all pile into the living room to sit and admire the twinkling tree while we sip egg nog.
It's my favorite Friday of the year.

Speaking of egg nog, I've been thinking I'd like to try making it.
Like the real deal. With nutmeg. And I'm thinking coconut milk.  
I might try this recipe.
Any advice for me??

Today I am stuffing clothes into a duffel bag, giving Hadley a bath, packing a cooler for the road trip, doing a quick clean up of the house, thinking of what games we should play with my family tomorrow night, excited for good conversation with Grant and while we drive, bringing Breaking Dawn in the car because I did things backwards and waited to finish the book until I saw the movie, and anxious to see how Hadley will like a long drive now that she's facing forward in the car. We love turning around to peek at her. She always gives us the biggest open mouth grin.

I also can't stop thinking about my new shop! It's really out there! And I'm really thankful to all of you for taking a peek and telling the world yesterday. Happy clementine season, guys! They're in the grocery stores! Okay, are you ready for Thanksgiving week?!! After a weekend of seeing Edward and Bella on the big screen (with a husband who was just as excited as me), filling up a shopping cart with essentials and luxuries and being able to pay for it, and seeing my little one playing happily at Grandma's house like such a big kid, I'm feeling very thankful. Yes. Dates and sufficient funds and cheerful babies. These are definitely things I am thankful for. This Thanksgiving, I'm thankful to be right where I am. Thank You Lord, for putting me right here. Thank You for placing me in this phase of family, with this husband, with these responsibilities, in this body, in this house, in this town.

I'm thankful for specifics..

That traffic is not a part of my life.
That we don't have too many places to go. Home is where I thrive.

That I feel so much better, stronger, and more energetic than last year.
That my husband loves me and wants the best for me. (even when I forget this)
For a girl just like me, right next to me.
For the time after dinner when I do the dishes and listen to them play wrestlemania.
For people that I love talking with.
For 2 bathrooms in our house. Upstairs and down.
For good food. For healing.
That I miss my daughter after she goes to bed.
For a simple, sweet daily routine. (routine! I love it.)
For a husband that I respect and trust and enjoy.
For the fun little shows that are part of our time together in the evening.
For baking. For banana bread.
For enough time to take showers and sleep.
For peace that stays with us, even though we have problems.
That God is in control of all the intricate functions of our bodies.
For a family full of brothers and sisters in Christ.
For hard work, and the initiative to do it.
That we don't have too much.
For His faithfulness.
For strength for today and bright hope for tomorrow.
For blessings all mine, with 10,000 beside.

I do not want to mix pumpkin with cornbread. No.
Cornbread is perfect as it is. I'll have it straight up plain, please.
And pumpkin is for mixing with chocolate. It's dessert
I will not have them in the same pan.
I will not have them, Sam I Am.

But I did have them together, my friends. I don't know what happened in my stubborn mind to make me do it, but I mixed them. Annnnd... It's a whole different animal. Tender. Moist. Sweet. Scrumptious. I know you're trying to picture what it tastes like. Well, don't think pumpkin, because the taste is so mild it's barely there. Don't think cornbread either- it's way too luscious, not crumbly or dry. 
It actually reminds me of... 
graham crackers!
Yes. It took me until day 2, eating it cold out of the fridge to nail it- but the coconut sugar makes it taste like a big, soft graham cracker! It's so delicious, I'm planning on making it over the Thanksgiving days next week. It would be perfect with leftover turkey, or a spicy chili, or as a holiday breakfast. 

Pumpkin Cornbread
(gluten free, dairy free)

1/4 cup melted coconut oil
1/4 cup coconut sugar
1 T. honey
1 large egg
1/4 cup coconut milk
1 1/2 tsp. vinegar
1/4 cup pumpkin puree*
heaping 1/4 tsp. sea salt
1/4 tsp. baking soda
1/2 cup corn meal
1/2 cup rice flour

Blend coconut sugar with all of the wet ingredients. Mix in dry ingredients. Don't overmix. Add batter to a greased pie plate or 8x8 inch baking dish. Bake at 350 degrees for 20-25 minutes, or until golden brown and a toothpick stuck in the center comes out clean. Serve with cinnamon sprinkled on top, if you like. Mine was too sweet to serve with extra honey, but I love to do that, so next time I will cut back on the sugar. 
*I may have done more like 3 Tablespoons of pumpkin. I didn't want it too strong.

Girls. We need to talk. Last time I got my hair cut (a few weeks ago) I asked for a Malibu Treatment and it changed my world. They rub some gel in your hair, you sit under a dryer for awhile, wash it out, and poof! Awesome hair. Have you heard of this? Do you get it done? Let me enlighten those who are unfamiliar...

A MALIBU TREATMENT will remove excess buildup in your hair caused from hard water and water softeners. It strips calcium, iron, and impurities that are saturating your helpless strands.. sometimes making them look dull or change color. 


I could tell a difference immediately! My hair was softer, shinier, and lighter. It amplified my natural highlights and made me excited about my untouched-tresses again. Oh, have I forgotten to tell you?? It's been over 2 years since I got any highlights! Maybe not a big deal.... but BIG DEAL. Right?! It's exciting and Grant loves it. He's always liked my darker side. I like it too, and now I feel like it's darker hair done right. Afraid to go natural? You should try it. I think it's the "in" thing right now, anyway. At least that's what I heard from Joey Maalouf.
The Malibu was $16 at my salon. Not bad, but I think I'm going to look into buying the product myself and just bring it with me next time I get a hair cut. I've heard you can do that?? Anyway, I highly recommend this for you guys next time you want to splurge at the salon. 

Oh, and some of you guys were asking about my navy nail polish in this picture. It's Midnight Cami from Essie, and I got it here for about $6. I love it! I have a hard time spending money on polish, but this is my first bottle of Essie and I can tell you it's worth the extra buck.

Where will you be next week at this time? on The Day Before Thanksgiving. Will you be out there with the best of 'em grocery shopping? Will you be stationed in the kitchen with a check list and crowded counters, whipping up make-ahead salads and pies? Will you be at your desk, wishing it was 5:00? Will you be company, or will you have company? Will it be you and yours around your own table or will you be on the interstate headed somewhere familiar? Will you be at your sister's, admiring her lovely home? Will you be dropping off luggage in your childhood bedroom, knowing that your mom is making dinner and you can relax? Will you have the newspaper ads spread out and Black Friday plans in full swing? Tell me! 


As for me, I'll be packing up the car with Grant and traveling to Nebraska to be with my family. I'll be making a pie in my mom's kitchen and seeing my new nephew and trimming the big tree. 
Wherever you are, I hope you'll be "home" for the holidays. 
I hope there will be traditions and sweet conversations and leftovers and thankful hearts!


Now let's fill up that pecan crust from yesterday, shall we? This luscious pumpkin pie is made with silky coconut milk and wholesome sweeteners, and most importantly, it's coated with chocolate!! Because if you're going to make pumpkin pie for Thanksgiving, why not make it historic? I warn you: this pie is rich. Cut conservative slices for post-Turkey eating and larger slices with leftovers.

Chocolate Pumpkin Pie 
(gluten, dairy free/ unrefined sweeteners)

1 1/2 cups pumpkin puree
1/2 cup coconut milk (the full-fat kind. I buy this stuff. It's BPA free!)
2 eggs
2 tsp. cinnamon
1 tsp. ginger
1/4 tsp. nutmeg
1/4 tsp. cloves
1/4 tsp. allspice or cardamom
1/2 tsp. sea salt
1/2 cup coconut sugar or 1/3 cup honey*

*Use whichever sweetener is easiest for you, or use a mix! Coconut sugar has a lovely mapley taste, but honey is sweeter with a touch of acidity, which I love. Feel free to make the call. 

Add all ingredients to a food processor and blend well. Pour into prepared (unbaked) pecan pie crust and bake for 45-60 minutes at 350 degrees. Pie is done when center is set, but it will still quiver a little like gelatin when you nudge the pan. Let cool completely before adding chocolate layer. 

Chocolate Layer 
(pictured here is a chocolate pudding-y layer, but this chocolate shell recipe works better)
1/4 cup cocoa + 1/2 cup coconut oil + 1/2 tsp. vanilla + 3 T. honey
Combine ingredients in a small pot and place over low heat. Heat, stirring, until everything is just melted and remove from heat. Spoon over cool pumpkin pie and place in freezer for 20 minutes. Eat immediately or store in the fridge until ready to eat. 

NOTE: Store leftover coconut milk in a pretty glass bottle in the fridge. Add it to soups, coffee, tea, milkshakes, etc.

I was born to flute pie crusts. I have tiny fingers. And they aspire to crimp edges of dough. It's my favorite job in the entire realm of baking! So if I love pie crust so much, why am I not popping pies out of my oven every other day? (You're allowed to do that in November.) Part of the reason why is that making crust intimidates me. (along with about 10 other reasons, including things like cookies and cake.) I know it can be done, and is actually really fun, nevertheless it's labor-intensive and I'm out of practice. But I came across the solution the other day. 

Pecan Crust. It's just as delightfully salty and full of good fat flavor. And you can still flute the edges if you like! (I like.) So, hey all my gluten free friends and friends who really like pecans! Here's a crust idea for all your holiday pie making! It's quite simply the easiest, fastest pie crust you'll ever make. Fool-proof and fear-proof. 

Pecan Crust
(makes one 9-inch pie)

1 1/2 cups pecans
1 egg
1 T. coconut oil
1 T. coconut flour
2 T. honey
1/8 tsp. sea salt
optional: 1/2 tsp cinnamon

Place nuts in food processor and pulse until coarsely ground. Add remaining ingredients and pulse until mixture forms a ball. Grease a 9-inch pie pan. Press pecan mixture into the pan and up the sides, slightly wet hands works nicely to do this. Nut crusts have a tendency to burn easier so avoid pressing it all the way up the sides. I went about halfway up and fluted the edges, of course. 


Fill crust with whatever filling you like and bake until filling is done. 
(Just follow the filling recipe.) Serve warm or chilled. 
Bring on the coffee-drinking and merry-making! You made pie!!

Whoa. November. Slow down! Anyone else smitten with this too-short month? I could live in it for ages! The sudden appearance of Christmas commercials, the 4:30 in the afternoon lighting of lamps, the scarves and slippers, the planning for turkey and pie and holiday company, and the question "is it too early to hang these Christmas lights?" hangs in the air. But sadly, guys, we're almost to the middle of this month of anticipation already. and we need to talk about what's going on. So much good stuff. What's up with you? Here's the latest from our house...









  1. My twin sister had her first baby!!! I have a new nephew! His name is Davis. And, on the same day, my baby sister got engaged!!! I have a new brother! So thankful for all of these people.
  2. Jumping into the holidays with reckless abandon. 
  3. Bring on the Christmas movies, ABC Family.
  4. Voting.
  5. Enjoying the green grass and mild weather. And an occasional backyard bonfire.
  6. Soup that "tastes like Thanksgiving turkey"-Grant. It was actually chicken. 
  7. Watching Dancing With The Stars. Can't be helped. :)
  8. Eating these chips and pineapple salsa.
  9. Breaking Dawn this weekend!! We are absurdly ready for this movie.
  10. Getting to the gym with my fellow tread millers. 
  11. Sipping cup after cup of Easy Now tea. I'm not really tense, I just picked it out for fun. 
  12. On the hunt for a good pomegranate/raspberry tea. Any recommendations?
  13. Annual Deer Hunting weekend with the Harms clan! It's our Early-Thanksgiving every year.
  14. Communicating with the baby in my house, who understands so much now. I love this age! 
  15. Playing "Home Alone". (hands on cheeks, yell "ahhhhh!") Dancing to Linus & Lucy. 
  16. A few Christmas playlists on repeat. Instrumental, mellow, vintage.. I don't mess around.
  17. Pecan-Crusted Chocolate Pumpkin Pie. Again, not messing around. 
  18. Mom came to visit! 
  19. She brought me groceries and sat at my table and ate my pumpkin bread and played with my girlie.
  20. A mom who buys you your favorite bottle of kombucha? So cool. 
  21. Initiating pajama-wearing for miss Hadley. (instead of just sleeping in her squash-stained clothes.)
  22. Going to see Eric Hutchinson in concert this week. We love him.
  23. ahhhhh!!!!! a concert. it's going to be like a for reals date. What should I wear? 
  24. Keeping a little something up my sleeve just for you. It's a big surprise. More soon! 
  25. And concocting some fudgy walnut goodness. Sharing soon.
